Hello! Beth and Aaron here – our first official blog post! Aaron is currently visiting Beth in Washington and tonight was our first evening together so we took the opportunity to make a delicious dinner to celebrate the launch of our blog! We apologise for the disarray while we’re ”under construction” but Beth’s computer is a serious dinosaur and takes way too much time to load a website. After our hours of hard work (and perhaps a glass or two of wine) we were able to pull it together and we’re off to a fantastic start. We can’t wait to continue and share more with you!
Tonight we made a delicious veggie lasagna that is based on a recipe from the KathEat‘s food blog, with a few variations. We used ricotta instead of the cottage cheese she suggests and added basil to each layer of veggies. What we got was excellent. A good lasagna with a lighter twist, which tasted great on this hot summer night. And of course, we had to pair it up with a fabulous red wine – we both love Chianti so that was the obvious choice!

After we wanted something sweet, but again, nothing to heavy, so we chopped up some fresh strawberries, sprinkled them with some dark chocolate chips and topped with some whip cream.

Delish! It was a great meal to toast the start of our project and we had a great time taking pictures of it all.
Now we’re just relaxing while we digest. Tonight we’re out on the town but we’ll see you again tomorrow morning when we post the details of a delicious CHOCOLATE BRUNCH. Can’t wait!
