I got a bit behind on posting yesterday, so it was a wonderful surprise to see that Beth posted from England! Did I mention I am jealous of her trip! Ugh
Last night I made a quick and simple dinner, but it was soo yummy. I tried the Organic Creamy Butternut Squash Soup by Imagine– it was very good!
I also made a turkey sandwich on these great buns that I found!
This morning I woke up early to get working away at my thesis. Guess what I woke up to? More rain! I guess I can’t complain because I have been spending most of my days inside, but a little sunshine would be nice! Apparently, August is suppose to pick up!
I made some coffee and oatmeal to warm me up.
In the mix:
- 1/3 cup oat/seed mix, rice milk, water
- 1 banana
- 1 tbsp peanut butter
- 1 tbsp unsweetened coconut
- sprinkle of peanuts
- sprinkle of dried blueberries
After a busy morning, I had worked up quite the appetite for lunch! I have been cravings salads so much lately, which is unusual because I am a huge carb-lover! I decided to pick-up some good salad bowls at Dollarama because my bowls are too tiny and I hate making salads on a plate. I found these giant bowls, so I bought two! They are perfect. I made a huge salad in the giant bowl along with some wildberry tea.
Huge right? I love it!
In the salad:
- 3 leaves of romaine lettuce
- 6-7 slices of cucumber
- 1/2 a tomato
- 1 stalk of celery
- 1 small carrot
- 3 sweet pickle slices
- 2 tbsp cheddar cheese, cubed
- 1 cob of corn
- 3-4 slices of turkey, chopped
- 3 tbsp PC’s Mediterranean dressing
Such a delicious meal!
I found LUNA bars at the grocery store this week so I will be trying one of those later as some pre-game food for frisbee! Hope they are good!
