Monday!
The rest of my weekend was nice and productive. I had tons of energy in the afternoon and put it to good use getting all my cleaning done. We keep our house in pretty good shape but it’s old so the dusting seems never-ending! It was certainly nice to have things nice and clean afterwards :O). All my chores worked up quite an appetite. Our kitchen was a traffic jam of people when I went down to make dinner but I just couldn’t wait any longer!
Dinner was just a throw-together dish, but it turned out pretty yummy. I think my grumbling stomach helped!

First, I sauted pepper strips and black beans in some olive oil and garlic. While cooking, I seasoned the mixture with lemon juice, salt and pepper and some oregano. Then in a bowl I layered brown rice, the peppers and beans, hummus, salsa and bleu cheese. Topped with hot sauce. Deeelish! And spicy – I had to cool my mouth down with some yogurt afterwards :O).
After dinner I had a Skype date with my former co-blogger Aaron. She said she’s been missing blog world lately, as it was a good way to be constantly inspired to stay on track with her healthy eating habits. Since she started her Master’s program she’s gained a bit of weight and kind of struggling with getting back to her usually healthy ways. Do you find healthy foodie blogs keep you motivated too?
As for this morning, after four days in a row of working-out, I decided to make today an off day. But when I woke up it was too beautiful not to take advantage! I bundled up and headed out for a nice long walk in the park.
Once home I cooked some breakfast – this may look familiar!

I had leftover pumpkin-flax batter from yesterday and this breakfast was just too good not to repeat! I made sure to cook my pancakes less time this morning though so they were a bit raw in the middle – just how I like them :O).
So now it’s time for work. Feeling nice and refreshed from the weekend so I’m ready for action. Happy start-of-the-week readers!

I just started my blog a few weeks ago, but I definitely have found that it helps keep me in line with healthy eating. I’m really enjoying the accountability.
