Good morning!
Today is an exciting day, because it’s my mum’s birthday!

Happy Birthday Mum!! Here’s a pic of me, my sis and the birthday girl this summer. I hope I look that good when I’m her age! I’m going to celebrate both my mum and my sister’s birthdays in Cleveland this weekend! Can’t wait :O).
Now let’s rewind. Last night’s dinner was broccoli fried rice.

I made fried rice for the first time a little while back and decided to make it again for dinner last night. It is really simple and can be switched up a million different ways, so it may be my new week-night dinner love. Only this time I didn’t have a recipe to follow and tried to make it from my memory. First I cooked some minced garlic and broccoli in olive oil. Then added 2 eggs and cooked until they were a bit scrambly, but soft. Next, I added some cooked brown rice and soy sauce, stir stir stir and voila. I think it worked! Tasted like it did anyway. Cooking without a recipe is always an adventure.
I had a nightmarish sleep last night which is never fun! Then for some reason my alarm went off at 6AM – I guess I accidentally set it at some point!? It was really odd. When I did finally have to get up this morning I felt like I’d been hit by a bus! Boo.
I made a yummy breakfast, which helped :O).

2 TJ’s waffles toasted and topped with a banana, Justin’s maple almond butter, a tbsp. of maple syrup and cinnamon. Tell me that breakfast doesn’t make up for a lack of sleep!
I’ve decided finally that today will officially be my day-off from working-out. Because I have big plans to be a couch potato after work. I’ve been missing Top Chef for weeks now but tonight they’re replaying all the episodes I’ve missed, starting at 8PM. I am going to veg out and catch up! My plan to actually keep up with a series is failing miserably so this is totally necessary. hehe.

I looove fried rice and have made a healthy version in the past, similar to yours. So easy and delicious! Now I’m craving it again…
I think its great to take a night off to veg out- your body and mind need it sometimes!
