Phew, last night was a TV watching marathon. I watched three episodes in a row of Top Chef and am officially caught up! It was a tough job, but I had to do it :O). Glad to see my favorite is still in the running. It really is getting down to the super talented contestants but I think it’s kind of a shame that right as the best chefs remain, the show is edited to focus on all the drama! I much prefer to just watch some good cooking.
Of course, the meals on that show put my dinner to shame, but since I ate it before I tuned in, I knew no different :O). This was kind of invented as I went and ended up as a bowl of Pumpkin Curry Soup with Food Should Taste Good Olive chips.

In a pan, I browned a bit of minced garlic with a tbsp. of olive oil. Then I added about 2/3 a can of pumpkin puree, 1/3 can of black beans, salt, pepper, curry powder and some chopped pieces of brie. It looked like thick soup when I was all done, so that’s what I’m calling it. Whatever it was, it was absolutely delish! I love pumpkin anything this time of year and the melty brie was juust divine.
After last weeks rainy, rainy weather, this week has been just gorgeous. So I was happy to head outside for a run when I got up this morning. I started with a fleece on and realized I didn’t even need it once I got going. It was a good run, about 40 minutes worth, and then I came home to do some ab and arm strength training.
After that it was time for oats!

- 1/3 cup each oats/water/vanilla soy
- banana
- tbsp. flax
- splash of vanilla
- cinnamon, stirred in
- scoop of pumpkin butter
- scoop of raw almond butter
My guess was right, this was even better with lots of cinnamon. This may be my new favorite combo! The pumpkin and almond butter get all melty and delicious on top. It’s heavenly!
I feel like this week is draaaagging. It totally feels like Friday and I am bummed it’s not! That is the problem with upcoming fun weekends – they take forever to arrive and then go too quick! Anyway, time to face reality and get back to work :O).

I’m all about soup right now, its’ getting so cold here again.. *sigh* I’m just dreading the *white stuff* that I know is coming soon enough.. lol!
