Even though it’s pitch black outside by 5PM these days, I can’t resist some post-work fresh air when it’s this warm outside. So yesterday evening I took a nice long walk around the neighborhood before dinner. Man I love walking. Then I came home and got to work on my PM meal.

This omelette was fabbbulous. I started with a spritz of olive oil and some garlic in a pan, then added mushrooms and spinach. After the spinach was mostly wilted I added two eggs and cooked a few minutes more, before adding some of my Bucheron cheese and folding over. I topped the omelette with a bit of salsa and served with Olive “Food Should Taste Good” chips. Yum! That cheese is amazing. It totally made the whole thing taste gourmet. I have one little piece left which I plan to savor!
Breakfast was much simpler than my usual creations, but it was just what I was in the mood for today. Sometimes cold cereal is just perfect :O).

1 cup of Kashi Go Lean Crunch with a tbsp. of ground flax and vanilla soy milk. And an apple. Easy!
So I am EXCITED for tonight because we’re finally celebrating my roommate Nicole’s October birthday. It is very hard to coordinate 4 girl’s schedules apparently! She requested a cook-in, so we are each in charge of something. The menu is:
Champagne for aperitifs, a bottle of Cabernet Sauvignon for dinner, and then a dessert wine; Cheese and crackers, etc., for appetizers from Nicole
A salad featuring fresh orchard apples and a poppy seed burgundy dressing from Allison
Vanilla Bean and Butternut Squash risotto from yours truly
and Pumpkin Pie (!) from the other Beth in my household. There are two of us. It can be confusing :O).
Anyway, how good does that all sound!? Fantastic if you ask me. I’ve actually never made my recipe before so it should be interesting. If you see a picture of take-out pizza on the blog tomorrow you’ll know why! ha.

Yes, you should! I actually found it way nicer than eating out. Best part is, when it’s time for bed, all you have to do is climb the stairs :O)
