Wednesday! Thanksgiving break must have been quite a refresher because now it feels like the work week is speeding by :O).
Thanks for all your sweet comments about the new banner, I’m pretty pleased myself!
I had a ton to do last night and alllmost skipped the gym but ended up deciding to go at the last minute. So glad I did because I actually managed to work out and get everything done – sometimes I think I have less time than I actually do! I think I’m still not quite used to being out of work at a normal hour and having that extra time in the evening is wonderful.
By the time I got back home I was super hungry and whipped up a random dinner from the contents of my fridge.
I sautéed edamame, tofu, and bell peppers in olive oil and garlic and then made a sauce out of soy sauce, almond butter, curry paste, salt and pepper. I put the mix on a serving and 1/2 of TJ’s tortilla chips and topped with humus, salsa and parmesan cheese. Yum!
And then I sat down to take a pic and eat and the most annoying thing happened!! My arms were all shaky from strength training at the gym and I couldn’t steady them long enough to take a clear shot! I tried four times and finally gave up. So this is the best I could do :O(. I need a tripod I think!

Hopefully you get the idea.
So yes, tonight is Christmas tree night in my house and I’m very excited for our winter wonderland :O). I’ll try to take a (non-shaky) picture or two to share when I see you all next :O).

Yeah, no recipe – just made it up as I went! I kinda wrote down how I made it in my post and if you follow that you should be good! Easy peasy :O)
