From the National Weather Service: URGENT – WINTER WEATHER MESSAGE: A BLIZZARD WARNING REMAINS IN EFFECT UNTIL 7 PM EST THIS EVENING. A BLIZZARD WARNING MEANS SEVERE WINTER WEATHER CONDITIONS ARE OCCURRING. DO NOT VENTURE OUTSIDE. THIS IS A LIFE THREATENING SITUATION FOR ANYONE WHO BECOMES STRANDED.
Aaand I’m still at work today. Makes total sense.
Anyway! How about last night’s dinner?

To make, I browned onions and peppers in a bit of EVOO and salt, added some diced tofu, added pepper and oregano and cooked. Meanwhile I prepared some quinoa. Once both were ready, I combined my veggies and grain and then tossed the mix in balsamic vinegar and a little black truffle oil. Oh my, I love you truffle oil. Best purchase of all time.
Once my food was plated, I decided to add a bit of salsa, mostly to beautify it. Presentation is everything, even when I’m feeding only myself
.
For dessert, I enjoyed two of my new favorite sweet, Trader Joe’s chocolate Mochi.

These are an Asian treat – a sort of dough surrounding balls of ice cream. My roommate recommended them to me and since I am in love with all things doughy, I knew they were a must-try! Now I want to eat them every night
.
So hopefully work ends a bit early today. I would still like to head to my gym (which is only 2 short blocks away) and get some endorphins flowing through my system. I must say, Gold’s Gym, I am impressed. Through all this horrible weather they have remained open by staffing the building with those who are able to walk to work. That’s more than I can say for a lot of gyms in the area! I just wanted to give my Dining and Dishing stamp of approval because I feel in this case it’s completely due
.

Oh that’s rough! Our little blizzard happened yesterday. And I got to sit and watch it for hours before going home (and not getting to leave early- booo!).
And I see a new Trader Joe’s treat to try! That place is a danger to my waistline… but I forgive them because it’s organic. My logic is messed up on that one, but I’m not going to fix it…
There was hardly anyone at the gym this morning…between our blizzard and earthquake apparently people took the morning off. Glad to hear you are still getting in the sweat sessions and not letting the weather stop you!

I have never had truffle oil before, what does it even taste like? And I’ve heard it’s really expensive?
It is hard to describe…super intensely flavorful..earthy…DELICIOUS! It is expensive, but you only need a tiny drizzle to add a big punch so it lasts forever!
We got the blizzard yesterday (more like a steady snowfall than a blizzard but still…..). We got every bit of the snow they predicted for us. Hope you guys make it through OK!
OMG that warning is hilarious/frightening all at the same time, esp since I’m looking at my window and know exactly what you’re talking about.. I wish I could get to my gym today!

love mochi! the original place that manufactures the ones they sell in trader joe’s is in L.A. – the stuff at their store – fresh – is AH-MAZING.

The gym is probably the best place to be in a blizzard. There are millions of ways to keep warm.

Oh my. That sounds serious. I know I don’t live in hurricane zones but I have never seen the weather service say ‘this is a life threatening situation’ .

what kind of truffle oil do you use? some of the recipes i’ve made this year require it but i’ve always just substituted. do you think it’s necessary for different cooking styles?
My truffle oil is black truffle oil from Dean and Deluca. It definitely has a very unique flavor so if a recipe calls for it I would go for the real thing!
