I think I died and went to nut butter heaven last night!
I’ve been dying to try these Nut Butter Crusted Fries ever since I first saw them. What could be better than a valid reason to eat peanut butter for dinner? (Besides peanut butter for breakfast and lunch too of course
). So last night I gave it a try.
Mine were made out of sweet potato spears, although the original also recommends parsnips.

After preparing my spears, I coated them in a mixture of 1 tbsp. peanut butter, 2 tbsp. almond butter, 1 tbsp. EVOO and a bit of salt.

And then placed on a baking sheet. The original recipe recommends lining the sheet with parchment paper but we were all out, so I just put a light spritz of canola oil on the tray.

I baked for 20 minutes at 400 degrees, stirred and then baked for 20 more. While the fries were cooking I sautéed about 3/4 a bag of spinach in a dab of butter. Once that was finished, I drizzled the cooked spinach with 1/2 tbsp. of maple syrup and sprinkled with 1 tbsp. of unsweetened coconut. I made maple kale a few weeks ago and I loved the combination. The sweetness of the syrup really cut the usual bitterness of kale. I thought it would work nicely on spinach too.
All together!

This was SO DELICIOUS! I think I am in love
. I ate half of what I made and am hoping that they will crisp up nicely again under the broiler because I cannot waste such yumminess! I will report back.
