On Saturday I did two things I’ve been meaning to do for a while: made Nigella Lawson’s granola and practiced with my new camera!
I just love Nigella and her recipes. For this particular recipe, Nigella writes that “This happens to be only the best granola you’ll ever taste in your life.” Not only the best granola she has ever tasted in her life but she even goes so far as to say the same for her reader! Such confidence. I had to test it out.
Of course a few modifications were made. Here is my take:
- 4 ½ cups old-fashioned rolled oats
- 2 cups mixed nuts
- ½ cup sunflower seeds
- ½ cup sesame seeds
- ½ cup packed light brown sugar
- 3 teaspoons ground cinnamon
- 1 teaspoon sea salt
- 3/4 cup unsweetened applesauce
- 1/3 cup rice syrup
- 1/4 cup honey
- 2 tablespoons sunflower oil
- 3/4 cup of dried cranberries
The recipe itself is super easy! You just throw everything into a bowl…

(sometimes you have to move the bowl when the cat tries to jump in)


And mix. Nigella says to add your raisins (cranberries) after baking, but if you are too busy keeping the cat away/learning your new camera/trying not to set the house on fire you can add them now!
Spread out on a pan and bake for 40-60 minutes at 300F. Stir 3 times or so while baking to ensure everything goldens evenly.

And there you have it! Easy right?
Of course I immediately tested “the best granola you’ll ever taste in your life” over an orange ginger Siggi’s.

Phenom! Good thing too, because this recipe makes 10 cups. Good to note for future granola making endeavors.

Granola… it’s like crack for me. Which is why I don’t make it THAT often, and when I do, it’s ridiculous how quickly I’ll go through it…
