I just love salads. The toppings are endless, the flavors are layered and they provide a hearty dose of veggies. Good and good for you! What’s not to love?
Except then it gets cold and steamy bowls of soup and stew sound so much more appealing.
Over Christmas break, I made a recipe that I really enjoyed – Spinach with Pinenuts and Raisins. It was a nice way to enjoy spinach that’s perfect for the colder months. Just like salad, there are a million variations you can make with this. Last night I fancied it up with cranberries and pecans.
Spinach with Dried Cranberries and Crushed Pecans:
- tbsp. olive oil
- 1/4 cup chopped onion
- tsp. minced garlic
- 3 cups of spinach
- tbsp. of dried cranberries
- tbsp. of crushed pecans
- salt and pepper
First, lightly brown garlic and onions in olive oil over medium heat.

After a few minutes, add spinach, cranberries, pecans and salt and pepper to taste.

Once spinach has wilted, your dish is ready to be served.

Easy! And a really delish way to get some warm vegetables in your tummy.
As I was photographing my finished product, the cat launched herself across the kitchen and landed feet first into my beautiful spinach! So I threw her into the recycle bin. Unfortunately the recycled version of Amelia is just as annoying as the original. But you’ll be pleased to hear this dish is just as yummy with paw prints on top

That looks great! I agree with you on needing warm veg during cold weather….sometimes I compromise and dump them on a salad too.

Spinach and dried cranberries is one of my fave salad combinations (with goat cheese) but I’ve never tried to warm. Will be doing this ASAP. I loved Art and Soul, amazing wine and food. I’ll be curious to see if you had a similar experience!
mmmm. I just love spinach (well…most greens!). Warming it up and adding in salad toppings is such a great idea. Silly kitty!

I love eating my greens, and usually I find plain wilted spinach is a little too boring for me. This is a great idea to add cranberries and pecans! I will have to try this one out =)
How interesting. I love spinach with walnuts and cranberries, but I always eat that combo cold…as a salad. I’ll have to try it warm sometimes…minus the kitty paw prints of course.
