Morning! Hope your weekend is going fabulously.
I won’t let my banana shortage ruin my oatmeal breakfasts this weekend. Instead – I’m going with apples! While nothing can beat the creamy marshmallow texture of a whipped banana, these oats are delicious in a whole different way.
Sweet maple cinnamon apples cooked with vanilla cinnamon-scented oats, topped with a rich dollop of peanut flour sauce. Let’s begin!
You will need: (for one serving)
- 1/3 cup each oats/vanilla soy milk/water
- 1 small red apple
- tbsp. each maple syrup/water
- cinnamon
- vanilla
- tbsp. flax seed
- 2 tbsp. peanut flour
- 1.5 tbsp. water
- pinch of salt
Start by washing and chopping your apple. In a small saucepan, combine apple, equal parts maple syrup and water and a generous shake of cinnamon. Allow apple to cook until tender, about 3 minutes.
Next, add oats/vanilla soy milk/water, flax seed, a splash of vanilla and more cinnamon. Allow to cook, stirring frequently.
Meanwhile, in a small dish, combine peanut flour, water and salt. Stir until a creamy peanut butter texture forms.
Once oats have reached desired consistency, pour into a bowl and top with peanut flour sauce. Serve!

oh yes, apples are great in oatmeal! Definitely different than bananas but it’s always good to switch things up.
Not joking, I have never had peanut flour. I feel a little left out.
