So after a few jam-packed weeks of fun, I’ve decided to ground myself this week instead of spending my evenings frolicking around DC. And of course, when I arrived home from my run yesterday, my sister invited me out with her friends for some Korean barbeque. I’ve never been for Korean barbeque! And because I wasn’t “allowed” to go, I wanted to so much more. But I stayed strong! And stayed home.
It was for the best anyway, as I needed some time for my next recipe from the Salad as a Meal Challenge, Home Cooked Chickpeas. I have big plans to make my very first batch of homemade hummus, which calls for these chickpeas as the primary ingredient.
These were super simple to make (and tasted delicious!) but do require a fair amount of time. The process began on Sunday afternoon with a good rinse and overnight soak and concluded with yesterday evening’s 90-minute simmer. Just me and my chickpeas hanging out while they cooked away. They sure did make our house smell amazing! So now I’m ultra-excited to put these to good use in a fresh batch of hummus tonight.

Most def! They’re cooked with onions, garlic, olive oil, parsley etc. so theres definitely a lot of good flavor in there.
