One of the fun things about blogging is that sometimes I can lie and you never know the difference! Not that I would ever say a recipe that looks delicious also tastes delicious when it actually tasted terrible or anything

I considered lying to you about this next recipe but I suppose I should make an effort to be a better person at some point in my life. So I’m coming clean!
Last night I decided to make my next Salad as a Meal recipe, polenta croutons. These croutons are one of the elements of Patricia’s Cesar salad, which need to be made a few hours in advance. My plan was to make the croutons last night and then incorporate them into a salad this evening. But they never quite made it…
We started so well. I lined my baking tray and cooked the polenta/parmesan mixture until it was nice and creamy.
The problem was you see, I wanted to make these croutons while it was still light outside so that I’d have some good natural lighting for my photos. But I was so hungry! And when my polenta was finished cooking, it never quite made it onto the baking tray…
Because I ate it for supper. Oops!
Certainly the sign of a good recipe though, no? PS: Salad as a Meal is officially on sale! Clearly, I recommend the book

I’m a huge fan of polenta, I love that stuff! I don’t think i’ve had polenta croutons though!

haha. that’s a common occurance for me! especially when i try to make roasted chickpeas…lol
weird that i just grabbed some polenta at the grocery store the other day! i hadn’t had it for a LONG time, but the sun dried tomato version was calling out to me

Sometimes the best meals are the ones that never made it to the plate. I hear you about the good daylight though, it is pretty funny when I work recipes and cook times around when the best light in the kitchen will be coming through my windows.

I would roast sweet potatoes to transform it into a cool dish, but end up eating it!
