Heat on, heat off, heat on again…I’m getting tired of this finicky spring weather! In case you hadn’t guessed by my complaining, it’s definitely back on today
. Which is especially annoying since my sister and I will be wearing strapless dresses tonight as we head to the Washington Humane Society’s Fashion for Paws show. But oh well, I’m super excited – it’ll be the first time I’ve been to a runway show! And there’s no better way to pass the time until a big night than to cook
.
Or you know, make a beautiful springy salad.
I must admit, as I flip through Salad as a Meal (or any cookbook really) each week deciding what to make, I’m always drawn to the recipes with pictures. It’s hard not to be tempted by those spectacular foodie photos! But when I spotted this one sans picture, I was drawn in by the description alone. Sweet cantaloupe, fresh tomatoes, tangy goat cheese… what’s not to love??
Sprinkled with fresh basil and mint and a generous crack of pepper. The real star of this salad though has to be the yogurt lemon dressing. Patricia’s very own most-loved dressing might I add!
Really, there’s no flavor fresher than that of a lovely lemon. This was a breeze to throw together and made for a delightful early supper. And I think it’s probably best that I eat salad before I go see a bunch of models strut down the runway

What a unique combo! I never would have thought cantelope would go well with tomato and cucumbers, but it sure does look delicous in that picture.
A salad that I do make that is also yum is cantelope, lots of mint, and a bit of honey!
That salad is such a unique combination and it sounds like it’d be very refreshing! The heat was definitely off all yesterday by me, but we might have to turn it back on by tonight!
