I can’t believe that the Salad as a Meal Challenge is coming to a close! Sunday will be my last day blogging for the series and I’ve got just two posts left. How quickly did that come and go??
So in this last week, I thought it would be nice to do a little post of recaps and highlights. Starting with my very own Dining and Dishing faves!
Chilled Pea and Buttermilk Soup
Chilled Evergreen Tomato Velouté
Chicken Salad with Green Beans, Tahini- Lemon- Yogurt Dressing, and Cilantro
Cantaloupe, Tomato, Goat Cheese, Cucumber and Onion Salad
I also want to highlight the lovely ladies who have been participating in the challenge alongside me. For different takes on some of the recipes you’ve seen here/recipes you didn’t see here at all, check them out!
- Forays of a Finance Foodie
- Ciao Down (goat cheese cheesecake with spiced grapes!? – shoot me!)
- Diabetic Foodie
- Penny Pinching Epicure
- Marche Dimanche
- All Things Lovely
- Urban Food Producer
What a fun challenge it’s been. I’ve seriously had the best time creating content for these posts. I’m really proud of the recipes and photos I’ve developed from the challenge and am so pleased I had the chance to participate. Dining and Dishing has been looking especially beautiful these last few weeks and that always makes me happy
.
So I will see you later in the week with one final “Salad as a Meal”.
What fun projects have you been doing lately??
