Hi Bloggies! It’s been a dream of a day over here. For a while now I’ve been dying for a day to do next to nothing and with today’s yucky weather it’s been perfect
. I cooked a yummy breakfast, my friend Jackie popped over for a bit, I ran a few errands and enjoyed a lovely massage on my gimpy shoulder. And I made this delicious lunch!
My last (sniff, sniff) Salad as a Meal recipe! What a good one it was. I was browsing the book for something simple and lunchy and this was juuust right.

Favorite salad combo: greens, cherry tomatoes, palm heart, bell peppers and salmon, dressed with olive oil, balsamic and mustard.
That salad looks delicious. I’m a big fan of fruit on salads–especially berries. And pecans–yum!

I love to make a black bean, corn, tomato and cilantro salad. It is the perfect spring or summer side salad for a BBQ or can be thrown in top of a bed of lettuce for a full hearty meal!

My favorite is probably mixed greens with cucumbers, avocado, cherry/grape tomatoes, a little red onion and feta cheese and just finished off with a light vinegarette.
During summer, I also like fruit in salads – like spinach and strawberries or something with mandarin oranges maybe.
I know I may be boring, but I still to this day love a delicious cobb salad:)

I love a good Insalata Caprese on a hot summer’s day. Simply the best!
Greek salad is actually my favorite! I love the salty goodness of Kalamata olives and feta cheese and the crispy coolness of cucumbers. What a great salad to end on.
My favorite salad combo is with chopped walnuts, cranberries and goat cheese – yum!

Ohh, nothing like a cool greek salad! Most of my salads are a little bit of this and a lot a bit of that, but my favorite additions are fried eggs (love the runny yolk) and my favorite sweet salad is a combo of spinach, chickpeas, goat cheese, strawberries, and toasted pecans! Mmm!

I love a basic tomato salad: fresh summer tomatoes, basil, good balsamic vinegar, sprinkled with sea salt and pepper. So simple, but so satisfying
My favorite salad is a Cobb (Toms, Lettuce, Bleu Cheese, Avocado, egg and Balsamic dressing)or Cickpea, Toms, Red onion, Feta with Balsamic dressing.
I love salads with hearts of palm and artichoke hearts.. yum
One of my favorite salads is asparagus, hearts of palm, roasted red peppers and feta cheese with a fresh herb dressing (usually oregano and thyme). It is yummy but really everything with feta…

Mixed greens with shrimp, feta, roasted eggplant, cucumbers, tomato, and artichokes topped with a lemon herb dressing. Mmmm mmm!

I love fruit salads. I also love iceberg lettuce with a mixture of ranch and ots of buffalo sauce!
I would love this book, especially now that summer (and its beautiful produce) is in sight!
My favorite combos:
Winter: roasted sweet potato and/or butternut squash, black beans, quinoa or farro or wheatberries, raw red peppers, cumin
Summer: heirloom tomatos, sea salt, a little olive oil, maybe some feta or goat cheese, but really, those tomatos alone are perfection
