Good morning!
So we’ve been talking California, California, FitBloggin…and today you get…a smoothie
. Life is not always so exciting I’m afraid!
Yesterday was the first day I felt the air thick with dreaded DC summer humidity – YUCK. Which mostly makes me sad because my beloved bowl of morning oats no longer sounds appealing.
So instead, a smoothie-in-a-bowl!
Made like this:
- 1 cup of vanilla soy milk
- 1 banana, sliced
- 1/2 cup of frozen raspberries
- 1 tbsp. of chia seeds
- a pinch of xanthan gum (thickens the smoothie so it’s more bowl-worthy)
blended then topped with:
- 2 tbsp. Nature’s Path granola
- tsp. of sunflower butter
Cool and refreshing
. And a delish way to enjoy a healthy dose of fruity goodness in the AM. I think you’ll be seeing a lot of these as summer sets in!
Speaking of, tomorrow we’re having a BBQ potluck at work and I’ve got to decide on something to make tonight. Drop me some suggestions! I am the world’s most indecisive recipe browser and could use some help. And then tomorrow you may just see your fave summer recipe featured in my post
.
See you then!

I’m going to have to drop the money on the xantham gum. I want thicker smoothies and crushed ice just isn’t doing it.
I’m the worst recipe browser ever, too!! As far as things I’ve made, I just made a wheatberry salad with chipotle chicken that could be good for a pot luck: http://www.wearenotmartha.com/2011/05/wheatberry-salad-with-chipotle-chicken/
Or sweet potato hummus? http://www.wearenotmartha.com/2011/04/sweet-potato-hummus/
I love that your smoothie is in a bowl! I totally need xantham gum!
I agree, the humidity in dc is annoying these days. Your smoothie looks really yummy!
mmm Love bananas in smoothies! Makes them SO much more delicious.
Suggestions for the potluck:

Look delicious! I’ll definitely have to try this recipe out. (I’ve never heard of sunflower butter before…interesting!)
I took Patricia Wells’ Ham & Cheese Bread to a recent potluck and it was a huge hit.
i bet!! that bread is divineee.
Tomato Mozzarella with Basil and Balsamic is my go to recipe for any summer pot luck…
It’s still oatmeal weather here in SoCal! Pretty chilly at night…I’ve forgotten what humidity feels like. What about oats in smoothie? I’ve seen my brother make that for himself and he said it was pretty good.
a very good suggestion! the only thing is, i feel like they get a bit lost all blended up, you know??
YUM! Waiting for all these darned storms to pass so that it feels like summer again. The midwest is really getting hit this May. I seriously think it has stormed every day for the past couple weeks!
Yum! I’ve seen smoothies in a bowl before, but never tried them. When it gets hot I also love overnight oats! I need to do my own blog post about them, but until then, here is Merf’s recipe: http://www.merfinprogress.com/2011/05/pbooiaj/
