Hi, I’m Beth – welcome to my blog!
- I was born in Wales in ‘85, and moved to America with my family when I was a few weeks old.
- We lived in Cleveland, OH for my whole childhood. I love that city and miss it very much now that I’m gone!
- I went to college in Ontario – to try something different without moving too far away from home. I had a blast in Canada and met some of my very best friends while I was there.
- I graduated in ‘07 with a Bachelors in Media, Theory and Production and an Associates in Broadcast Journalism.
- After college, I traveled around Europe with my friend Aaron for 3 months. We ate a lot of good food and it gave me a whole new perspective on how it should be enjoyed.
- I finished my trip in Rwanda, where I did some work with a few fellow multi-media students from my school. It was a life changing experience!
- Post-travels I moved back to Cleveland for a little over a year where I started working as an Editor for a Newswire service.
- In February of ‘09 I moved out to DC to take a new position with my company. I was looking for a change and DC seemed like a good fit. One crazy year later, I absolutely love it here
. - I am currently enrolled in Culinary School at L’Academie de Cuisine and a Food Writing course with Media Bistro. My dream is to combine my passion for writing and food into a career, and I hope to work my way towards that in the next few years.
I’ve always loved good food. I love to discover it, shop for it, learn about it, cook it, and of course eat it! My parents are very healthy eaters and my dad is a talented chef, so growing up there was always a lot of great options available to me. I’m sure, similar to most, I picked up a few not-so-healthy habits in college. Now that I’m all finished with that part of my life it’s something I never want to go back to!
Like most American females, having a healthy relationship with food and body image has at times been a struggle. Over the past few years however, I’ve been making the journey to being in a good place with it all. I believe in eating a big variety of foods and enjoying exactly what you want when you want it so that you never feel deprived. I eat healthy as much as I can because it makes me feel my best. I also love little indulgences and almost always find a way to enjoy one each day. Balance is key! I think it’s important to listen to your body, and in doing so you can really create the healthiest and happiest version of yourself.
This project began in June of ‘09 as Cross Border Cravings. My Canadian friend Aaron and I liked the idea of creating a blog to talk about food and activity on both sides of the border. Aaron has since moved on from blogging to focus on her Master’s Degree. And so the blog is now a solo project under the new name, Dining And Dishing. Since it began, I’ve loved the idea of not only discussing the food I eat and the activities I enjoy, but also sharing the life I lead as a young professional navigating a new city. I’ve done some amazing things, eaten some amazing foods and enjoyed some amazing company – all of which I love to photograph, write about and share. I hope you’ll join me as I dish on food, exercise and most everything else about my life in the District.

Once I have a job again – yes, I’m looking – I want to try out their pierogi too.
